Course Overview

Senior Production Chefs manage a team to produce standardised dishes and menus within a kitchen environment. They strive to produce customers’ meals consistently to perfection according to predetermined specifications. They have the ability to work independently and lead a team in often highly challenging kitchen environments. Senior Production Chefs are likely to work in organisations where brands, recipes and menus have been created by a central development team. Senior Production Chefs and their teams work quickly and efficiently, producing food often in high volumes, which is repeated day after day, requiring energy, highly methodical organisational skills and attention to detail.

Individuals looking to study this programme will need to have gained prior experience in an operational role, typically without supervisory responsibilities.

The Content

This programme will develop skills, knowledge and behaviours in the following four key areas:

Culinary
Including preparation and cooking; knife selection and handling; taste; diet; nutrition; standardised menus; working in a time-bound environment.

Food Safety
Including taking responsibility for food safety practices; maintaining hygiene standards; storing/cooking/preparing ingredients.

People
Including supporting others; effective team management; effective communication; staff support and development.

Business
Including business strategy, vision and brand standards; profits and costs; customer and competitor profiles; legislation; risk assessment; minimising waste.


Functional Skills in English and Maths
Learners who have not already achieved Level 2 English and Maths, must do so as part of the programme.

The Assessment

Learners will need to undertake an End Point Assessment which consists of 3 elements and may be completed in any order.

• Practical observation
• Multiple choice test
• Professional discussion

Course Duration

Up to 17 months (ie a practical training period of up to 13 months, followed by an End Point Assessment (EPA) period of up to 4 months).
